Plant Powered Fried Rice

Ingredients:

  • 2 tbsp #sesame oil
  • 150 g broccoli florets (frozen works as well!) 100 g snap peas
  • 1/3 leek
  • 2 cloves garlic
  • 3/4 cup green peas
  • 3/4 cup corn
  • 2 cups cooked brown rice
  • 1 cup black beans
  • 1/3 cup #kimchi
  • 1/2 tbsp minced #ginger
  • 3/4 lime, juice
  • 2 tbsp #soysauce
  • 1/2 tbsp maple syrup
  • 1-2 tsp #sriracha (for those who like spice)
  • salt & pepper

To serve:

  • sweet chili sauce
  • avocado

 

Directions:

  1. Heat the oil in a frying pan. Add sliced #broccoli and sautée for 2-3 minutes on medium-high heat. Then add chopped snap peas and thinly sliced leek. Sautée for another 2 minutes. Lower heat to medium-low, add garlic, peas, corn and a good pinch of salt and let cook for about 2 minutes while stirring.
  2. Chop the kimchi in smaller pieces and add to the frying pan. Also add the pre-cooked rice, beans, minced ginger, #lime juice, soy sauce, and maple syrup. Let cook for a few minutes until hot and well incorporated, while constantly stirring. Season to taste with salt, pepper & sriracha.
  3. Serve the warm fried rice with sweet chili sauce and avocado if you have that at hand.
