Set oven to 200’C/390’F. Rinse the rice thoroughly. Place in a big sauce pan with water, butter and salt. Bring to boiling, then lower heat and let simmer for about 10 min. Meanwhile, slice apples and whisk together all the spices, maple syrup and orange juice. Layer apples slices in an oven proof dish and pour the syrup on top. Use your hands to combine everything. Bake in oven for about 25-30 min.
Back to the porridge. Add 2 cups milk and a cinnamon stick. Let simmer on very low heat while occasionally stirring. When the milk has cooked in, taste and see if you need to add more and let it cook further. It should be creamy yet still have some texture to it. This takes about 30-40 min.
Serve porridge with the warm, spiced apples, sprinkle of coconut sugar and a splash of milk.
All of this can be prepared in advance and then reheated!
