Set oven to 160’C/320’F. Combine all dry ingredients from the first section above. Melt the wet ingredients along with salt and vanilla. Pour over the dry ingredients and stir to combine. Transfer to a baking tray lined with parchment paper and spread out. Toast in oven for about 15-25 minutes or until golden, stirring a few times.
Whisk together lingonberry powder and water. Pour over the still warm granola and stir to combine.
Let the granola cool, then add goji berries and crushed freeze-dried strawberries. Transfer to a pretty glass jar and enjoy with your favorite plant-based yogurt or milk.
